Yoghurt Bites

Summer has finally arrived and Wimbledon’s in full swing! Serve up these strawberry yogurt bites to cool down and power up your little champion. Packed with strawberries for a burst of Vitamin C, fibre and antioxidants and yoghurt for a vital boost of calcium and protein!

Ingredients

  • 150g fresh strawberries
  • 2 tbsp & 170g thick greek yoghurt

Method

  • Wash and chop 150g of fresh strawberries
  • Pop them into a blender along with 2 tbsp of thick greek yoghurt
  • Give that a good blend until everything is nice and smooth
  • Then to a bowl add 170g of the greek yoghurt and pour in half of your strawberry puree mixture from the blender
  • Give that a good mix until everything is combined
  • Once the mixture starts to get smooth, pour in the rest of your strawberry puree mixture and continue mixing until all the puree is mixed throughout and you have a nice lump free mixture
  • When the mixture is ready, pour it into a piping bag or if you don't have a piping bag use a sandwich bag instead
  • If you are using a sandwich bag, once it is filled give it a little shake, seal up the top and cut a little hole in the bottom corner ready to pipe - top tip: only snip a tiny bit off the corner to make it more precise when you are piping
  • Then line a tray or plate with parchment paper and use the bag to pipe out your bites into round shapes, you can make them as big or small as you like
  • Now pop them into the freezer for a minimum for 1 hour and a half and your yoghurt bites are ready to go, enjoy!
