Ingredients
- 1 Piccolo Apple & Apricot pouch
- 1 small apple or 1/2 a medium sized one
- 2 tbsp plain flour
- 1/4 tsp baking powder
- Small splash of coconut oil (for cooking)
- Optional toppings: banana, yogurt, cinnamon
Method
- First grate your apple (top tip: make sure to work quickly to avoid the apple going brown)
- Then add in your Piccolo Apple and Apricot pouch (any of the other Piccolo fruity flavours would work too) and give that a quick stir
- Now add plain flour & baking powder and stir to combine
- Once you've got a lovely thick batter, it's time to get cooking! Use a medium heat and a non-stick pan with a small splash of coconut oil
- Spoon 3 equal amounts of batter into the pan and flatten using the back of the spoon
- Cook for 3-4 minutes, when you can see some air bubbles popping up flip the fritters over and cook the other side for another 3-4 minutes
- Once golden, they are ready to serve
- You can add your favourite toppings, we have used sliced banana, yogurt and cinnamon... enjoy!
