Sugar free banana, walnut & coconut rice pudding

Banana is rich in magnesium, and walnuts help with the production of serotonin.

Walnuts can be introduced from 6 months if ground, whole nuts should not be given until around 5 years old.

Preparation: 5 minutes | Cooking: 30 minutes | Serves 4 | Suitable for freezing

Ingredients

  • 60g pudding rice
  • 350ml full fat milk or plant milk
  • 200ml coconut milk
  • Pinch dried ginger
  • 1 banana, mashed
  • 3 walnuts, ground

Method

  • Place the pudding rice, milk and coconut milk and ginger in a heavy bottomed sauce. Bring to the boil then reduce to a simmer
  • Cover with a lid and allow the rice to simmer for 30 minutes or until all the milk has been absorbed and the rice is soft, stirring every few minutes.
  • Mix in the ground walnuts and mashed banana and serve. You can top with additional fruit or fruit compote
