Ingredients

  • 145g / ½ butternut squash
  • Piccolo Penne Pasta
  • 90g plum tomatoes
  • 70g green beans
  • ½ red onion
  • 1 clove garlic
  • 30g parmesan cheese
  • 2 basil leaves

Method

  • Chop up all your veggies
  • Add your butternut squash to a pot of boiling water & green beans
  • After about 2 mins add in your pasta to the same pot
  • Whilst your pasta is cooking add your onion, garlic & tomato to a pan
  • Once your pasta is soft, drain and add to the pan
  • Turn off the heat and add in your parmesan cheese
  • Top with fresh basil to serve
  • Enjoy!
