Pinwheels

Sneaking in extra veg can be a teary affair (and not just from our highchair dwellers!) Sometimes you just have to roll with it, and what better way that with some puff pastry. Our hidden veg pinwheels aren’t just a crowd pleaser, but a great way to ensure even the likes of courgettes make it onto our little ones plates.

Ingredients

  • Piccolo Classic Tomato Sauce
  • ½ courgette/50g approx
  • 1 carrot/45g approx
  • 6 plum tomatoes/55g approx
  • Ready made puff pastry sheet 
  • ½ tsp ground oregano 
  • 45g grated cheese 

Method

  • Grate your courgette (press the grated courgette in some kitchen towel to remove excess moisture)
  • Grate your carrot and chop the tomatoes into quarters
  • Roll out the sheet of puff pastry and spread your Piccolo Classic Tomato Sauce on top leaving roughly a 2cm gap at the sides
  • Sprinkle your veg evenly over the top
  • Taking the longest side, tuck in your filling and roll your pastry so that it resembles a swirl at the end
  • Cut into your desired size pin wheels and sprinkle with grated cheese
  • Cook in the oven at 200 degrees for 15-20 minutes
  • Serve up as a great finger food or family snack!
