Fluffy Pancakes

Any recipe that only requires one pan is already a staple in our house, but what makes this one even better is it doesn’t require any flipping, so even on those days where you can barely lift your eyelids (let alone a frying pan) – we’ve got your back!

  • 250g self-raising flour
  • 1tsp baking powder
  • 250ml milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp Greek Yoghurt (plus extra to serve)
  • 50g raspberries (plus extra to decorate)
  • Handful of mixed berries to serve


  • Sift your flour and baking powder into a mixing bowl
  • Pour your milk into a measuring jug
  • Crack in an egg and add the vanilla extract, then mix until combined
  • Make a well in the center of your dry ingredients, and gradually add your wet ingredients until combined
  • Mix in the Greek Yoghurt before adding a handful of raspberries and squashing them in with the back of a fork as you go
  • Pour into a lined baking tin and add some extra raspberries on top
  • Pop in the oven at 180 degrees for 20 minutes
  • Serve with extra fruit and yoghurt, or cut into fingers for younger babies
