Mushroom Rice

If we had our way, every meal we make would be super easy and require no more than 10 ingredients. We’ve taken that big ambition and channelled it into making our creamy mushroom rice recipe that’s packed with all the nutrients, delicious for you, and weaning-friendly for your little one.

Ingredients

  • 5-6 mushrooms 
  • 1 clove garlic/ ½ tsp garlic granules
  • 60g broccoli 
  • 300ml Piccolo Chicken Stock 
  • 1 pack microwavable rice – (we used a brown basmati and quinoa mix)
  • Parmesan cheese 
  • Handful of fresh parsley 

Method

  • Finely dice your mushrooms
  • Gently cook your broccoli in a pan
  • While your broccoli is cooking, fry your mushrooms with a drizzle of Olive Oil and garlic
  • Make up 300ml of stock (1/2 a Piccolo Stock Cube)
  • Add the stock to your pan of mushrooms and alongside your microwave grain of choice
  • Add in the broccoli with the parmesan cheese and fresh parsley
  • If your baby is younger than 10 months, blend in a blender for a smoother texture
