A weaning friendly Greek-style chicken recipe that is both nutritious and delicious. You can wave bye-bye to hangry babies (at least for an hour or two).

Ingredients
- Chicken Marinade for x 2 chicken breasts:
- 2 cloves crushed garlic
- 3 tbsp lemon juice
- 1 carrot, peeled and chopped
- 1 tsp dried oregano
- 2 tbsp extra virgin olive oil
- Tzatziki dip:
- 4 tbsp full fat Greek Yogurt
- Handful of fresh mint
- 4 inch length of cucumber
- Juice ½ lemon
- 1 clove garlic
Method
- Dice your 2 cloves of garlic & add in your 3 tbsp lemon juice, 1 tsp oregano and 2 tbsp extra virgin olive oil to a bowl and mix
- Pan fry your chicken breast for a few minutes before placing into an oven dish
- Cover your chicken in the marinade
- Cover the chicken and cook for 25-30 minutes
- Whilst your chicken is cooking in the oven, mix together 4 tbsp full fat Greek Yogurt, handful of fresh mint, grated cucumber (press the cucumber in some kitchen towel to remove excess moisture), the juice from ½ a lemon and 1 clove garlic in a bowl
- Shred, chop or slice your chicken according to your baby's age and weaning stage and drizzle some of the marinade from the dish on top
- Dish up with some chopped avocado, cucumber, tomatoes and toasted pitta bread
- Serve and enjoy!
