Orange & Cranberry Muffins

Cranberries are a gem of goodness during the festive season. Packed with all the good stuff, we’re talking antioxidants, vitamins, and a zesty tang that even the tiniest taste buds will enjoy! Paired with the Vitamin C from a few oranges, this recipe is the perfect Christmas treat that won’t have your tummy time avoider jumping off the walls (or rolling off the playmat).

Ingredients

  • 1 egg
  • 245g natural yogurt
  • 60ml melted coconut oil or butter
  • 200ml honey/maple syrup
  • Zest of 1 orange
  • 1 tsp vanilla extract
  • 350g flour
  • 1tsp baking powder
  • 1/3 tsp bicarbonate of soda
  • 100g cranberries/fresh or frozen

Method

  • Mix your wet ingredients in a bowl until smooth
  • Add your dry ingredients and mix until combined
  • Add in your cranberries and give the mixture a final stir
  • Place the mixture into a lined muffin tray and bake at 180 degrees for 25 minutes (pop a skewer in the center to make sure they’re fully cooked)
