Ingredients
- 1 egg
- 245g natural yogurt
- 60ml melted coconut oil or butter
- 200ml honey/maple syrup
- Zest of 1 orange
- 1 tsp vanilla extract
- 350g flour
- 1tsp baking powder
- 1/3 tsp bicarbonate of soda
- 100g cranberries/fresh or frozen
Method
- Mix your wet ingredients in a bowl until smooth
- Add your dry ingredients and mix until combined
- Add in your cranberries and give the mixture a final stir
- Place the mixture into a lined muffin tray and bake at 180 degrees for 25 minutes (pop a skewer in the center to make sure they’re fully cooked)
