Bonfire rice

Remember, remember the 5th of November – it’s Bonfire Night and we’ve got a sizzling treat for your teatime dribblers. With added peas, carrots, and peppers for a hit of fibre and eggs for that protein-powered punch, this Bonfire Rice has it all in one dish suitable for 10+ months.

Ingredients

  • 200g cooked Rice
  • 1 carrot
  • ½ a red pepper
  • ½ a red onion
  • 1-2 tsp sesame oil (or your preferred oil)
  • 2 eggs
  • Handful of peas
  • 1-2 tsp reduced salt soy sauce

Method

  • Peel, slice and dice your carrots
  • Slice and dice your red pepper
  • Finely dice your red onion
  • Fry together in a pan with your choice of oil for about 10 minutes or until all the vegetables are soft
  • Add in your rice
  • Crack in your eggs and keep stirring/moving until everything is cooked
  • Add in your frozen peas and soy sauce. Keep on the heat until the peas are cooked through
  • Serve up!
