Ingredients
- 200g cooked Rice
- 1 carrot
- ½ a red pepper
- ½ a red onion
- 1-2 tsp sesame oil (or your preferred oil)
- 2 eggs
- Handful of peas
- 1-2 tsp reduced salt soy sauce
Method
- Peel, slice and dice your carrots
- Slice and dice your red pepper
- Finely dice your red onion
- Fry together in a pan with your choice of oil for about 10 minutes or until all the vegetables are soft
- Add in your rice
- Crack in your eggs and keep stirring/moving until everything is cooked
- Add in your frozen peas and soy sauce. Keep on the heat until the peas are cooked through
- Serve up!
