Baby Pasta with Sweet Potato Bolognese

A vegetable-packed meal

This is a tasty vegetable packed Bolognese with plenty of herbs: perfectly paired with scrummy pasta. The chunky pieces of cooked ditalini pasta are perfect for finger food or as part of a meal.This vegetable-packed sweet potato and beef Bolognese has a rich herb and tomato-ey sauce base. Served with artisan, hand- cut pasta made with rice flour. You can use normal pasta if you like.

Ingredients

  • 1 carrot, peeled and chopped
  • 500g minced
  • 1 tin of chopped tomatoes (400g)
  • 50g tinned cooked butter beans or red lentils (optional)
  • ½ tsp dried parsley
  • ½ tsp dried basil
  • ¼ tsp fresh chopped rosemary or a pinch of dried rosemary
  • 200ml boiling water
  • Glug of olive oil
  • ½ medium onion, peeled and finely chopped
  • 1 large sweet potato, peeled and chopped
  • 1 small clove of garlic, peeled and crushed
  • 1 medium red pepper, cored, deseeded and chopped,

Method

  • Add a glug of olive oil to a large heavy-based saucepan or casserole dish with a lid and put it onto a medium heat. Once the oil is hot, add in the onions and cook until they start to soften, around eight minutes. Mix in the garlic, red pepper, carrot and sweet potato, and reduce the heat slightly. Cook for around 15 minutes, occasionally stirring and adding a splash of water if the vegetables start to catch on the bottom of the pan.
  • Once the vegetables have softened, add the beef, breaking it up in the pan and letting it brown all over.
  • Once the beef has browned, add the tomatoes (once you’ve emptied the tin into the pan, fill it halfway with water and swill round to get all the left-over tomato and pour the tomato-ey water into the pan with the vegetables and beef), add in the stock cube, butter beans or lentils and herbs and water and mix together.
  • Bring the Bolognese to a boil, then reduce the heat and bring to a simmer, cover and cook for 30 minutes. Alternatively, you can put in a slow cooker and cook for 4 hours.
  • Just before it has finished cooking, put a pan on the hob with boiling water and cook the pasta according to packet instructions, drain and serve with the Bolognese.
