Ingredients

  • Dash of olive oil
  • 1 shallot of half a small onion, peeled and chopped finely
  • ½ garlic clove, peeled and crushed
  • Finally add the basil, take off the heat and puree into the desired consistency.
  • Half a red pepper, cored and diced
  • 200g pack of cherry tomatoes, cut in half
  • 75ml water
  • 2 basil leaves, chopped

Method

  1. Heat the olive oil in a deep, heavy bottomed pan and add the onions, stir for a few minutes until starting to soften, then add the garlic and cook for another minute.
  2. Add the carrot and red pepper and cook for a few minutes until starting to soften.
  3. Add the tomatoes and cook for a few minutes until they start to soften, mushing them into the dish. Add the water if it starts to dry out.
  4. Finally add the basil, take off the heat and puree into the desired consistency.
