Parsnips suit the cooler climates of the northern regions of France, particularly in the rich agricultural region of the Paris Basin.
FROM THE KITCHEN
Parsnips natural flavours are best bought out by roasting and they complement all the other root vegetables like sweet potato and beetroot. Delicious cut and roasted in chips, they are also delicious cooked with a white cheesy sauce.
Parsnips contain a wide variety of vitamins, minerals and nutrients, including lots of dietary fibre, folate, potassium and vitamin C, a great root vegetable for all the family.
People used to believe (falsely) that eating parsnips could relieve toothache or tired feet.
